This life is short and one of my biggest concerns is that I won't get to eat all the yummy foods this life has to offer, but God knows I'm no quitter so I will endeavour to devour all the yummiest foods that come my way.
Every now and then you come across a certain food that is just so good you never want to stop eating it... snickers bars definitely fall into this category for me. With life giving out its many challenges it seemed that my love of snickers bars and my desire to lead a healthy lifestyle clashed a little bit.....well there was only one solution - create a healthy version that would trick myself and all those other snickers lovers into thinking they were eating the sugary loaded chocolate bar. Mission accepted!
There are many healthy recipes on the internet but let's be real, who can be bothered sifting through them to find the one that actually tastes good and isn't a healthy person's warped idea of 'delicious'
Fear not, I have the recipe for you! and how do I know it actually tastes good? It got the seal of approval from the two biggest unhealthy baking lovers, my old man and my boyfriend.
Raw Snickers Slice
Ingredients:
Base:
1 1/2 cups cashews
1/2 cup shredded coconut
8 medjool dates, pitted (or regular dates soaked)
3 tbsp brown rice syrup
Peanut butter caramel:
8 medjool dates (or regular dates soaked)
1/3 cup peanut butter (natural crunchy is best)
2tbsp almond milk
1 tbsp brown rice syrup
Chocolate topping:
Option 1 -
Half block of good quality dark chocolate (70% or higher)
3 tbsp coconut oil
1/4 cup peanuts
sprinkle of rock salt
Option 2 -
100 grams cacao butter
6 tablespoons of raw cacao powder
3 tablespoons of coconut oil
1/4 cup peanuts
sprinkle of rock salt

Method:
For the base:
- In a food processor, process cashews into small pieces.
- Add in coconut, dates, and brown rice syrup and process until a sticky dough forms.
- Press into a loaf pan lined with parchment paper and put in the freezer.
- Process all ingredients, adding almond milk a little bit at a time until a smooth caramel forms.
- Spread caramel over the base.
- Scatter peanuts and rock salt on top of the caramel and press down lightly.
- Melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
- Drizzle chocolate over the top of the bars.
- Place back in the freezer until hardened.
- Remove from the freezer, cut into bars, and eat!
