There are three things I can confidently say I will love until the end of time and they are peanut butter, chocolate and banana.... there will never be such thing as too much of them and there will never be a better combination of foods. Saturday the 18th of July 2015 became a day to remember as it was the day I discovered the most divine raw banoffee pie, one bite and I knew I'd found my true love.
I started searching for a healthy desert recipe when I found out my mum would be making an amazing chocolate cake for a bunch of people who would be coming over for dinner and with my clean eating in mind I needed to come up with a healthy alternative.
How do I know this healthy desert ACTUALLY tastes good? My friend Katherine who is not one to like anything that has the words raw, clean eating, healthy or sugar free attached to its title gave it the seal of approval and even asked for the recipe! I know most of you won't know Katherine but I can guarantee you that this is a big deal.

Make this pie using a 20cm pie dish or use mini cake trays.
Ingredients
Base
1 cup of walnuts or raw cashew nuts
1 cup of raw almonds
1.5 cups of pitted dates
1/4 cup of cacao nibs (optional)
Filling
2 bananas
1 avocado
1/4 cup of raw cacao powder (or cocoa)
1/2 cup of cacao nibs (optional)
1/4 cup of raw maple syrup or 1/4 cup of coconut sugar
1 cup of peanut butter (or whatever nut butter you prefer)
Topping
2x 400g cans of coconut milk. (These need to be kept in the fridge overnight, a layer of cream will form on top. This is used for the top layer of the pie - I used AYAM coconut milk)
1 banana
Method
1. In a food processor blend the base ingredients until they are blended finely. Press into a pie dish and make sure the crust is 0.5 cm’s thick so it doesn’t crack when taken out of the dish. Place in the freezer.
2. Blend all the filling ingredients together until smooth. Place onto the base of the pie and then set in freezer for 10 minutes.
3. To make the topping, spread coconut milk over the pie (the coconut milk fat should have formed at the top of the can overnight). Slice up one banana and place on top of pie. Sprinkle with cacao powder and place in the freezer for an hour before serving.
